What Is Extra Añejo Tequila? Aging, Taste & How to Drink It

October 28, 2026

Extra añejo is the oldest official category of tequila, and the one made for slow sipping. Here's what the label means, how it compares with blanco, reposado and añejo, what it tastes like, and how to drink it.

What is extra añejo tequila?

Under Mexico's tequila standard, extra añejo ("extra aged") must rest at least three years in oak barrels of no more than 600 liters. It became an official category in 2006, and it sits at the top of the aging ladder.

Extra añejo vs. añejo, reposado and blanco

Category Time in oak What it's like
Blanco Unaged (under 2 months) Bright, peppery, pure agave
Reposado 2 to 12 months Agave with a soft layer of oak
Añejo 1 to 3 years Richer, rounder, more oak
Extra añejo 3 years or more Deep, complex, built for sipping

The longer a tequila rests, the more color, aroma and texture it takes from the barrel. With extra añejo, the goal is balance: oak and age deepen the agave rather than bury it.

What does extra añejo taste like?

Every barrel program is different. Here's how we describe CaliFino Extra Añejo, which rests five years in American oak and then one year in French cognac casks:

  • Aroma: toasted oak, dark chocolate, dried fruit, baking spice.
  • Palate: roasted agave, dark caramel, cocoa, toasted oak, fig, warm baking spices.
  • Finish: exceptionally long, velvety and complex, with lingering oak, chocolate and spice.

Does aged tequila still need to be additive-free?

Yes, and with aged tequila it matters most. Mexico's rules allow up to 1% caramel color, oak extract, glycerin and sugar syrup without listing them on the label, and those shortcuts can make a young tequila look and taste older than it is. CaliFino is 100% Blue Weber agave with nothing added, so its color and depth come only from time in oak. Learn what additive-free means.

How to drink extra añejo

  • Neat, at room temperature, in a small tulip-shaped glass that gathers the aroma.
  • Nose it first, then take a small sip and let it sit on your tongue before you swallow.
  • Give it a minute. A few minutes in the glass opens it up.
  • Save it for the moment: special celebrations, after dinner, or alongside a cigar.

Want a cocktail anyway? The Jalisco Smoke is built for it: Extra Añejo poured slowly over smoked ice with a twist of orange.
